I'm going to do the same thing to my Z coming soon when the SSR competitions come out in 17x9.5 in silver. They are 15 pounds a piece so I will save 10-12 lbs over stock. I've never had the experience of going lighter on a Z, but I have on my previous car, a turbo integra. I went from 21 lb 17's to 11.7 lb 16's and it made a HUGE difference. It wasn't just acceleration, though. The car and suspension reacted quicker over bumps and overall handled better... that alone was probably the biggest thing I noticed. It did accelerate quicker, and probably the most significant part was that I got into boost quicker. Once in boost, it's hard to tell a difference, although physically I'm sure it's there. But to reduce turbo lag is a big plus, IMO. On a dyno, you will see a gain of a few horsepower by shaving off 10 or 15 lbs of centrifugal rotating mass in your drivetrain. Granted, it will be nothing like something mounted right to your motor (such as a crank pulley or flywheel), but the difference is still there.
